Paneer & Chickpea Salad

Ingredients
Peas
1/4 cup
Corn
1/4 cup
Tomato
1/4 cup
Carrot
1/4 cup
Capsicum
1/4 cup
Onion
1/4 cup
Cucumber
1/3 cup
White chana
1/4 cup
Coriander leaves
1 handful
Lemon
1 no
Cashew
1 handful
Garlic
3 pods
Pepper powder

Instructions

Soak chickpeas overnight and pressure cook for 3 whistles (add salt too).

Soak cashews for 3-4 hours and discard the water.

Blend cashews with salt, garlic & 2 tbsp of water (gradually add water to get a creamy salad dressing).

Boil peas until cooked & sauté corn in butter and salt.

Add in all the chopped veggies, peas, corn, grated paneer & chickpeas.

Squeeze lime, add the salad dressing, and some crushed pepper.
Tips
You can add any veggies of your choice.
Don’t skip the coriander leaves; it adds a lot of flavor!
