Appam is a Kerala recipe with a crispy edge and soft center, made from fermented rice batter. Also called hoppers!

Instructions

Soak rice overnight.

Blend soaked rice, grated coconut and water (1 cup). Add water gradually to adjust consistency.

Now add all the blended ingredients into a bowl along with yeast, salt, and jaggery.

Let it ferment for 4-5 hours. It will rise and bubble up after fermenting.

Add more water if required. Spread it into a deep tawa and rotate to spread it.

You can also use a flat dosa tawa if you don’t have a deep appam tawa.
