This is a Karnataka recipe famously called akki roti, great to make use of leftover rice at home.

Ingredients
Rice
1 cup
Carrot
1 no
Onion
1 no
Coriander leaves
1 handful
Cumin seeds
1/2 tsp
Instructions

Blend leftover cooked rice and transfer to bowl.

Add all the ingredients in and mix well.

Gradually add water to make a thick batter.

Spread the batter onto baking paper/banana leaves thinly, after wetting your fingers.

Slap the batter side onto a hot tawa and remove the baking paper.

Drizzle in some oil/ghee and cook both sides until crisp.
Tips
You can make this just with cooked rice or just with rice flour too.
