This is a podi filled with nuts, to drizzle onto hot dosas, idlis, and rice! A rich blend that adds a nutty flavor and nutritious boost to your meals.

Roast all the ingredients separately until aromatic. Let peanuts, chana dal, walnuts, pista, cashew, and almonds roast until golden.

Once cooled, blend all the ingredients with salt.

Blend just enough to powder them, don’t blend for long or the nuts will start releasing oil.
This can be used to make quick chutney, just add 1 tbsp of the podi, spices of choice, grated coconut and blend.
Podi can be served with ghee, drizzled onto dosa, idli, or rice.
You can also add dried red chilli if you prefer it spicy.
Refrigerate it for an extended shelf life, else, it could develop mold.
Adjust the amount of salt and red chilli to suit your taste preferences.
